Do you smell all those beautiful coloured spices which come to tickle your nostrils?
This week, I invite you to discover my favorite Arabic recipes, which I had the opportunity to taste during the first cooking class organized by FoodHack, in collaboration with Samia (founder of the association R.C.M.A) who warmly welcomed us with her students from Iraq, Palestine and Syria. A convivial evening shared with the charming Sara from Sara’s Healthy Kitchen blog.
On today’s menu, Hummus, Fattoush salad and Moutabal revisited by me in vegan version.
During this evening, we got to know Samia’s students who taught us how to make their recipes and made us discover a mixture of flavours and textures typical of their origins. I was particularly touched by their kindness and moved by their journey. Most of them fled their country because of the war. This evening is an opportunity to remember how lucky we are not to have experienced this kind of situation and encourages us more to share a little warmth that comes from the heart. I am very admiring of their desire to integrate into our culture and the speed with which they learn French, resume their studies and look to the future with great positivism.
We start our course with the famous fattouche salad which is composed of a mixture of salad, tomatoes, pepper, cucumber and aromatic herbs. It’s fresh, it’s tasty, it’s colorful, everything I love on a plate! The fact that everyone has participated in its realization gives a very special dimension to this recipe. It is in a relaxed and festive atmosphere that we cut the tomatoes, prepare the small pieces of Lebanese bread, then the sauce to accompany the dish.
Salade fattouche is not without its crispy bread pieces that make it truly unique. Accompanied by a sweet lemon sauce it makes everyone agree to the tasting: a great success! With Sara, we would gladly serve ourselves a second plate, but when we know the rest of the dishes, we hold back because if there is one thing that remains in our memory of this unforgettable evening, it is that we were warmly welcomed and served generously!

The traditional Fattoush salad with its crispy libanese bread on the top !
- 1 organic salad
- 4 tbsp chopped fresh parsley
- 4 tbsp mint fresh mint
- 1 tsp chopped fresh coriander
- 4 organic radishes
- 2 fresh onion
- 1 organic cucumber
- 4 organic tomatoes
- 1/2 red pepper
- 2 Lebanese breads
- 60ml of olive oil
- 20ml of cider vinegar
- 5 tbsp fresh lemon juice
- 1/2 pomegranate
- 1 tsp whole cane sugar
- Wash and cut the salad leaves.
- Finely chop the herbs.
- Cut the radishes, onions, cucumber, tomatoes and peppers into small cube.
- Mix all the ingredients in a large bowl.
- In a frying pan, add enough oil to cover the bottom of the pan in thick layer. Cut the Lebanese bread into a square (3x3cm) and fry in oil until golden brown.
- Place them on some kitchen roll (in order to soak up the extra oil) and wait until they cool before adding them the salad.
- Make the sauce by mixing all the ingredients in a shaker.
